I have one of those BBQ mats which I use on the local park’s BBQ.  An awesome way to have some outside time for very little money, you can even serve them in a bread roll with some salad.

Ingredients

Onion finely diced or shallot finely sliced
Grated veges
Garlic
Olive Oil
Fresh herbs or pizza herbs

6 eggs

Method

Stir fry veges & herbs until cooked
Remove from frypan
Crack eggs in bowl with a little water and salt and pepper to taste and beat
Place baking paper in frypan
Tip in egg to make a pancake
Put vege on top
Allow to cook
Fold
Serve
