This a real hands-on recipe for all the family. Older children can start exploring workplace health and safety using the grater and the knife. Cooking is a fun task for a group as conversation and laughter become the extra ingredients to a tasty meal.
To make it gluten-free
Replace breadcrumbs with cooked rice
Stress-free hint
Use any type of mince – beef, chicken, pork
Use any type of vegetable – grated broccoli stem, sweet potato
Use dry breadcrumbs if that is all you have
Lamb meatballs
Ingredients:
250g lean minced lamb
1 onion, finely chopped
1 carrot, grated
1 zucchini, grated
1 egg, beaten
1 cup fresh breadcrumbs (3 slices bread chopped in the food processor)
Parsley
Pepper to taste
1 teaspoon oil
Method:
Combine all the ingredients except the oil. Form the mixture into small patties.
Place in lined baking tray use a little spray oil if you like, cook in a moderate oven until cooked through, turn as required. (Can be cooked in a frypan or on the BBQ if desired)
Serve on a tray with coriander yogurt or in a bread roll with salad.
Coriander Yoghurt
1 cup Greek style yoghurt
1 small cucumber finely diced
1 tablespoon finely chopped coriander
Salt & pepper

These are awesome wrapped in flat bread. You can shape them like small sausages as well. And Voila!sausage rolls
