I love these as I am gluten and diary free and these stay flexible in the fridge for several days.  I just microwave or toast to heat up.

These are a family favourite, even for the pumpkin haters.

Pumpkin Pancakes

1 cup of grounded rolled oats or quinoa

¼ cup milk of choice

½ cup mashed pumpkin

½ teaspoon cinnamon

½ teaspoon mixed spice

1 tablespoon baking powder

1 tablespoon apple cider vinegar

1 tablespoon of sticky sweetner (honey, maple syrup etc)

In a food processor

Grind up the oats or quinoa to a flour and then add the rest of the ingredients.  Give a whizz.

Let rest for 10 minutes.  Oil a frypan and spoon ¼ cup of batter evenly spaced out.

Well done, we have pancakes.
