For when you have gluten and dairy free friend over for afternoon tea and you want a pretty little slice to accompany the vegetable sticks and hummus 😊

Part a

  • 1 1/2 cups GF self-raising flour
  • 1 cup quinoa flakes
  • ½ cup brown sugar
  • ½ cup desiccated coconut
  • 1 tsp ground cinnamon

Part b

  • 135g rice bran oil

Part c

  • 400 g canned pie apple or frozen berries or combination (I have used frozen pineapple, yummo!)
  • 1 tsp ground cinnamon

Pre-heat oven 180C

Mix Part “a” ingredients in a large mixing bowl.

Make a well in the centre and add Part “b” and combine to well mixed

Scoop out 2/3 cup of the mixture and put aside (this will be sprinkled over the fruit)

Put the rest of the mixture into a lined baking tray and press down

Spread Part “c” over this mixture and then sprinkle with the extra up aside.

Bake in 180C oven for 30-35 mins
